Hungarian Mushroom Stew

 

Ingredients:

 

Basmati rice

 

Mushrooms, sliced

 

Olive oil

 

Salt and pepper

 

Mushroom stew

 

Cooked lentils (use ½ tin for a single portion)

 

Pink pickled onions

 

Fresh parsley

 

 

Method:

 

1. Preheat the oven to 180°C

 

Prepare the Rice:

 

Rinse and prepare the basmati rice (boil for approx. 10 minutes).

 

 

2. Roast the Mushrooms:

 

While the rice is cooking, slice the mushrooms and spread them on a baking tray.

 

Drizzle with olive oil, season with salt and pepper, and bake for 8-10 minutes, until golden and crispy.

 

 

 

3. Heat the Stew:

 

While the rice and mushrooms are cooking- In a small non-stick frying pan over medium heat, reheat the mushroom stew.

 

Stir in the cooked lentils (½ tin for a single portion) and cook until hot and bubbling.

 

If the stew seems too thick, thin it with a little boiling water to reach your desired consistency.

 

 

 

4. Plate and Serve:

 

Drain the rice and spoon it into a serving bowl.

 

Top with the mushroom stew, roasted mushrooms, pink onions, and fresh parsley.
