Mango Tofu Skewers

 

Ingredients:

 

Mango Tofu

 

Skewers (optional)

 

Flatbreads

 

Curry Coconut Yogurt

 

Avocado

 

Rocket

 

Slaw

 

Mango Salsa

 

Pickled Pink Onions

 

Fresh coriander, chopped

Method:

 

1. Cook the Tofu:

 

Preheat oven to 180°C.

 

If using skewers, thread tofu cubes evenly onto them. If not, place tofu on a baking tray.

 

Grill for 10 minutes until golden.

 

 

 

2. Prepare the Flatbreads:

 

Warm under the grill.

 

Spread coconut yogurt evenly to the edges.

 

 

 

3. Prep the Avocado:

 

Halve, remove the stone, and slice.

 

Divide between portions.

 

 

 

4. Assemble:

 

Add rocket to the flatbreads, followed by slaw, mango salsa, and avocado.

 

Top with the baked mango tofu.

 

 

 

5. Finish & Serve:

 

Garnish with pickled pink onions and chopped coriander.
