Buffalo Lentil Quesadilla
Ingredients:

Tortillas

Cheez sauce

1 tin lentils (use ½ tin for one portion)

Buffalo sauce

Oil
-
Salsa packet (for topping)

Mixed salad leaves (for serving)

Slaw (for serving)
Method:

Assemble the Quesadilla:

Spread an even layer of cheez sauce on one tortilla (use all of it for one portion).

Drain and rinse the lentils.

Mix lentils with buffalo sauce and spread over the tortilla.

Place the second tortilla on top to cover.

Cook:

Lightly grease a large frying pan with oil and heat over medium.

Add the quesadilla to the pan.

Place a slightly smaller pan on top to press it down for a crispy finish. You can weigh it down with cans or press down using a kitchen towel.

Cook for 3 minutes, flip, and cook another 2–3 minutes until both sides are crispy and golden brown.

Serve:

Slice the quesadilla and top with the salsa packet.

Serve with mixed salad leaves and slaw on the side.
