Buffalo Lentil Quesadilla

Ingredients:

  • Tortillas

  • Cheez sauce

  • 1 tin lentils (use ½ tin for one portion)

  • Buffalo sauce

  • Oil

  • Salsa packet (for topping)

  • Mixed salad leaves (for serving)

  • Slaw (for serving)

 

Method:

  1. Assemble the Quesadilla:

    • Spread an even layer of cheez sauce on one tortilla (use all of it for one portion).

    • Drain and rinse the lentils.

    • Mix lentils with buffalo sauce and spread over the tortilla.

    • Place the second tortilla on top to cover.

  1. Cook:

    • Lightly grease a large frying pan with oil and heat over medium.

    • Add the quesadilla to the pan.

    • Place a slightly smaller pan on top to press it down for a crispy finish. You can weigh it down with cans or press down using a kitchen towel.

    • Cook for 3 minutes, flip, and cook another 2–3 minutes until both sides are crispy and golden brown.

  1. Serve:

    • Slice the quesadilla and top with the salsa packet.

    • Serve with mixed salad leaves and slaw on the side.
