Red Lentil Curry

Ingredients

  • Wild rice

  • Red lentils

  • Curry sauce

  • Water (200ml per portion)

  • Fresh coriander

  • Nigella seeds

1. Cook the Wild Rice

  • Rinse the rice under cold water.

  • In a saucepan, combine 1 cup of rice with 2.5 cups of water.

  • Bring to a boil, stir once, then cover and reduce heat to a simmer.

  • Cook for 35–45 minutes, until the water is absorbed.

  • Set a 20-minute timer to begin preparing the curry while the rice cooks.

 

2. Prepare the Lentil Curry

  • Rinse the lentils under cold water.

  • In a non-stick saucepan, add the curry sauce, rinsed lentils, and 200ml of water.

  • Bring to a gentle boil, then reduce the heat to a simmer.

  • Stir continuously for 20 minutes, until the lentils are soft and fully cooked.

  • Add a little more water if needed to reach your desired consistency.

 

3. Serve & Enjoy

  • Drain the rice, fluff with a fork, and divide into serving bowls.

  • Spoon the lentil curry over the rice.

  • Garnish with chopped coriander and Nigella seeds.

  • Serve with warm flatbread and enjoy!​​
