Red Lentil Curry
Ingredients

Wild rice

Red lentils
-
Curry sauce
-
Water (200ml per portion)

Fresh coriander
-
Nigella seeds
Flatbread
1. Cook the Wild Rice

Rinse the rice under cold water.

In a saucepan, combine 1 cup of rice with 2.5 cups of water.

Bring to a boil, stir once, then cover and reduce heat to a simmer.

Cook for 35–45 minutes, until the water is absorbed.

Set a 20-minute timer to begin preparing the curry while the rice cooks.
2. Prepare the Lentil Curry

Rinse the lentils under cold water.

In a non-stick saucepan, add the curry sauce, rinsed lentils, and 200ml of water.

Bring to a gentle boil, then reduce the heat to a simmer.

Stir continuously for 20 minutes, until the lentils are soft and fully cooked.

Add a little more water if needed to reach your desired consistency.
3. Serve & Enjoy

Drain the rice, fluff with a fork, and divide into serving bowls.

Spoon the lentil curry over the rice.

Garnish with chopped coriander and Nigella seeds.

Serve with warm flatbread and enjoy!​​
