West Indian Curry with Jerk Potatoes
Note: Banana blossom has been temporarily substituted with lentils due to a supply issue.
Ingredients:
Pre-made West Indian curry sauce with vegetables
1 tin of lentils (use ½ tin for one portion)
Pre-cooked jerk potatoes
Scallion, finely sliced (for garnish)
Omega seed mix (for topping)
Flatbread (to serve)

Method:
1. Reheat the Curry:
Add the pre-made curry sauce and veg to a saucepan over medium heat.
Drain and rinse the lentils (use ½ tin for one portion) and stir into the sauce.
Heat gently until hot throughout, stirring occasionally.
2. Reheat the Jerk Potatoes:
Warm the pre-cooked jerk potatoes in a pan, oven, or microwave until heated through.
3. Prepare the Flatbread:
Warm the flatbread under a grill or in a dry pan.
4. Serve:
Add the curry to a bowl and top with the hot jerk potatoes.
Garnish with finely sliced scallion and a sprinkle of omega seeds.
Serve with the warm flatbread on the side.
